Where Can I Edit the Tracking Options?

You can change the general newsletter settings under the account menu (top-right): > "Email Settings" > "Tracking". These settings will then be applied to all future email campaigns in the current list. 

You can also set the tracking options for a single newsletters in "Step 5 Send". 

Here you can select whether opens, clicks, conversions and Google Analytics tracking should be enabled or not.  If you disable tracking options, it may not be possible to carry out all statistical analyses. These settings will then be applied to all future email campaigns.
